| 3 | A few days ago I cooked a pork loin roast and two pork tenderloins that I thought was only one when I bought them.
My plan was to pull them both out at 140° and let them rest until 145°. Well, the tenderloins cooked way faster than I expected them to and I ended up pulling them out at 160° but they were still good and not dry because I brined them. The loin took much longer.
I have to say that pork loin was some of the juiciest and most delicious pork I've ever made. With some mashed potatoes and gravy that would have been at least a 9/10 meal | 162 |

Look, I love bacon cheeseburgers like anyone else, but over time in the last couple of years I'd say, I've come to realize this is kind of a cringe take. It implies that having no restrictions = good, and all you have to do is look around really to see that that's not really a good thing at all actually. Less rules doesn't necessarily lead to a better outcome, in fact a lot of times it leads to a worse outcome. Having some form of restrictions would probably be helpful actually and curb gluttony and lead to better health outcomes.
Of course I'm Orthodox, my restrictions mainly come from that, nothing is outright prohibited like beef for Hindus or pork for Muslims or Jews but I do go long periods of time every year where what I eat is very restricted and I don't think those restrictions negatively affect me, the opposite actually. The other day I was in line somewhere, and an old lady cut me in line. In fact not only did she cut me in line, she actually left the line for a bit, and then came back and cut me in line a second time.
Of course a lot of people's response to that will be to go "what the fuck, lady" and that certainly was going through my head at the time. Now it's worth pointing out that this old lady was probably very well connected where we were, and for me to do that probably would have landed me on a lot of people's shit list, so I didn't. Instead I held my tongue and got to the end of the line seven seconds or so after I would have otherwise.
We both will probably not even remember this happened a week from now, and in fact the only reason I even remember it now is because afterwards I made a note to make this post about it. Had I called her out on it and made a scene like many people would have in this situation, because of the social dynamics of where we were I almost certainly would have been made out to be the bad guy and ended up on people's shit lists, all for what, one spot in line? It was simply put a battle not worth fighting.
Always keep this sort of stuff in mind. If we were in a different place where the social dynamics weren't such that this would probably end negatively for me and carry longer term negative consequences for me, I might've done the "what the fuck, lady" thing.
Remember, there's a big difference between being a doormat and evaluating the risk vs reward and social dynamics of where you are and deciding to not escalate a situation like this. Not wanting to risk taking ten giant steps back in order to take one tiny step forward doesn't make you a doormat. A lot of people are gung ho about this muh principle stuff and end up doing way more harm than good for themselves by doing that, all to pat themselves on the back for having principles and not being a doormat. | 364 |
