Ingredients:
150 g flour
125 g sugar
1 ½ tsp baking powder
1 egg
½ tsp vanilla essence
120 ml milk
25 g butter softened
8 strawberries chopped into small pieces
Instructions:
Pre-heat the oven to 180˚C.
Add flour, sugar and baking powder into a mixing bowl. Give it a quick stir and leave a hole in the middle.
Crack the egg in the centre and add the vanilla essence. Mix it through just a little. Pour in half the milk and mix again, then add the remaining milk and mix one more time. Finally add in the softened butter and combine, stirring thoroughly for a minute or two (or on low speed for a mixer).
Now add the strawberries. Fold them through gently with a wooden spoon so they stay nice and chunky.
Carefully spoon your muffin mixture into patty pans, filling each 3/4 to the top for nice tall muffins. Pop them in the oven to bake for around 25 minutes or until golden brown.

Ingredients:
2 Tbsp olive oil
220g shrimp, peeled and deveined
1/4 tsp red pepper flakes
1 tsp smoked paprika
salt and pepper, to taste
1 tsp Italian seasoning
4 tomatoes, chopped
1/4 cup fresh basil leaves, chopped
100 gr fresh spinach
3 cloves garlic, minced
220g pasta (penne or spaghetti)
Directions:
Heat olive oil in a skillet on medium-low heat. Add shrimp, red pepper flakes, paprika, Italian seasoning and salt in the skillet and cook until shrimp is cooked through – about 5 minutes. Remove shrimp from the skillet and set aside.
In the same skillet, add chopped tomatoes, chopped fresh basil leaves, fresh spinach, and chopped garlic. Cook about 3- 5 minutes until spinach wilts. Remove from heat, cover with a lid and keep off heat.
Cook pasta according to package instructions. Drain pasta and add to the skillet with the tomatoes and spinach. Reheat on low heat, add shrimps back and mix well. Serve immediately.

8 ears of fresh sweet corn shucked, silks removed
olive oil spray for grilling
60 ml plain yogurt
60 ml light sour cream
30 gr parmesan cheese grated
2 tsp taco seasoning (see below👇🏼)

1 tsp salt
for garnish:
1/4 cup fresh cilantro chopped
60 gr shredded parmesan cheese

Instructions:
If you don't have taco seasoning ☝🏼, make it yourself, mixing in a small bowl: 1 tsp chili powder + 1/4 tsp garlic powder + 1/4 tsp onion powder + 1/4 tsp oregano +1/2 tsp paprika + 1.5 tsp ground cumin
Spray or brush each ear of corn with olive oil.
Grill for approximately 10 minutes, turning often to avoid burning. The corn should brown in places and be cooked through.
Meanwhile, mix together yogurt, sour cream, parmesan, taco seasoning, lime juice, and salt.
Take corn off of grill and brush with yogurt mixture.
Sprinkle with cilantro, shredded parmesan, and squeeze with lime juice.

Turn dough onto a lightly floured surface and knead for 5 minutes.
Form the dough into a square on your counter. Divide the dough into 12 equal pieces. Roll into a bread stick.
Place on a lined baking sheet. Cover and let rise for about 45 minutes.
Preheat oven to 200 degrees. Bake bread sticks for 12 minutes, or until lightly browned.
Mix together the butter, oregano and garlic salt. Brush over the cooked bread sticks.
