The workshop was honored to have two distinguished guest speakers: Mr. Hak Sok Chea, Technical Advisor at the United Nations Industrial Development Organization (UNIDO), and Ms. Lo Naysim, Deputy Director of the Department of Technology Research and Development. The objectives of the workshop were to provide participants with knowledge on: - Principles of general hygiene and food safety; - Principles of food drying and preservation; - Selection of appropriate drying techniques for various food products; and - Assessment of the impact of drying on food quality and safety.
