The change can be seen across most age groups, but especially among younger adults. In 2010, 82% of people aged 20 to 39 ate kimchi as a side dish. By 2024, that had fallen to 66%. The study also found differences based on income. People in the lowest income group were more likely to eat kimchi than those in the highest income group. However, although it's traditionally been eaten as a side dish, kimchi is also used in cooked dishes, and more people are now eating it this way. For example, kimchi can be used in dumplings or cooked into crispy pancakes. Researchers say the change in how people eat kimchi is part of broader changes in South Korean eating habits. They say future health advice should focus on balanced diets rather than just encouraging people to eat more kimchi. Nissin Releases Cold Water Instant Noodles Nissin — the Japanese company that created the world's first instant noodles in 1971 — has just released a new type of instant ramen that can be made using cold water. They're called Hiyashi Cup Noodle — "hiyashi" meaning "chilled" — and the company says they can't be made with boiling water. Instead, Nissin says you have to add chilled water from the fridge to the cup and wait for five minutes for the noodles to become soft and ready to eat. To make this possible, Nissin created a new way to manufacture noodles, which it calls the "Cold Rehydrate" method. The company says it took them five years to develop this method. Nissin said that with the increase in record-breaking heat waves in recent years, cold dishes have become more popular. So it decided to create a cold version of its popular instant noodles, which it says are "perfect for hot days." Although cold noodles are a common, refreshing meal that people enjoy during Japan's hot summers, this is the first time a company has created cold instant noodles. The new cold Cup Noodles became available in stores across Japan on July 20, with one cup costing 285 yen, or about $1.75. There are two different flavors: kimchi or chicken with lemon and salt.
