စိုက်ခင်းမှသည် … စားပွဲပေါ်သို့ ====================================== EHS Myanmar | 7.6.2023 ကျွန်တော်တို့ နေ့စဉ် ချက်ပြုတ်စားသောက်နေတဲ့ အစားအစာတွေကို ဈေးနဲ့ကုန်တိုက်တွေကနေ ဝယ်ယူရရှိကြတယ်ဆိုပေမယ့် တကယ့် ပင်ရင်းက ဘယ်နေရာက ရလဲဆိုတာ စဉ်းစားကြည့်ဖူးလား? ခေတ်တွေတိုးတက်လာတာနဲ့အမျှ လမ်းပန်းဆက်သွယ်ရေး လွယ်ကူလျင်မြန်လာတဲ့အလျောက် ပြည်တွင်းထုတ်ကုန်တွေသာမက ကမ္ဘာ့အနှံ့က တင်သွင်းရောင်းချတဲ့ အစားအသောက်တွေလည်း ပေါများလာတဲ့အပြင် အစားအသောက်ပိုင်းဆိုင်ရာ လုပ်ငန်းနယ်ပယ်တွေဟာလည်း တဖြည်းဖြည်း တိုးတက်ပြောင်းလဲလာပါတယ်။ ဒီလိုတိုးတက်ပြောင်းလဲလာတဲ့ ခေတ်ရေစီးကြောင်းမှာ "Farm-to-Table" ဆိုတဲ့ ဝေါဟာရသည်လည်း ဆိုရှယ်မီဒီယာကွန်ယက်တွေကတဆင့် တဖြည်းဖြည်းနဲ့ လူအများရဲ့ အာရုံစိုက်ခြင်းကို ခံလာရပါတယ်။ ဒါကြောင့် "Farm-to-Table" ဆိုတာ ဘာလဲ၊ ဘယ်လိုအကျိုးသက်ရောက်မှုတွေရှိသလဲဆိုတာနဲ့ ပတ်သက်ပြီး ယနေ့ဆောင်းပါးမှာ မျှဝေပေးချင်ပါတယ်။ "Farm-to-Table" မြန်မာလို တိုက်ရိုက်ဘာသာပြန်ရရင်တော့ "စိုက်ခင်းမှသည် ... စားပွဲပေါ်သို့" လို့ အဓိပ္ပာယ်ရပြီး “Farm-to-Fork”, “Farm-to-Plate” ဆိုပြီးလည်း အမျိုးမျိုး ခေါ်ဝေါ်ကြပါတယ်။ "Farm-to-Table" ဆိုတဲ့ဝေါဟာရက ကျယ်ပြန့်တဲ့ အသုံးအနှုန်းဖြစ်ပေမယ့် ယေဘုယျအားဖြင့် ကျွန်တော်တို့ နေ့စဉ်စားသောက်နေတဲ့ အစားအစာတွေနဲ့ စိုက်ပျိုးမွေးမြူရေးခြံတွေကြားက ဆက်နွှယ်မှုကို အသားပေးရည်ညွှန်းတာ ဖြစ်ပါတယ်။ ပုံမှန်ဆိုရင် စားသောက်ဆိုင်တွေက ဟင်းပွဲတွေအတွက် လိုအပ်တဲ့ ပါဝင်ပစ္စည်းတွေကို ပြည်ပက တင်သွင်းတာမျိုးရှိသလို တခြားဝေးလံတဲ့ဒေသတွေကနေ သယ်ယူရတာမျိုးလည်း ရှိကြပါတယ်။ ဒီလို သယ်ယူရတဲ့အခါမှာ တာရှည်ခံအောင် အသီးအနှံတွေကိုဆိုရင် မရင့်မှည့်ချိန်မှာ ခူးကြရတယ်။ အသား၊ ငါးတွေဆိုရင်လည်း အေးခဲနေအောင် ရေခဲရိုက်ပြီး သယ်ကြရတယ်။ ရလဒ်အနေနဲ့ကတော့ အရသာပေါ့ရွှတ်ပြီး အာဟာရမပြည့်မီတဲ့ အစားအစာတွေ ဖြစ်လာတော့တာပေါ့။ “Farm-to-Table” စနစ်မှာတော့ စားသောက်ဆိုင်တွေအနေနဲ့ ပြည်ပက တင်သွင်းတဲ့ ကုန်ပစ္စည်းတွေအစား ပြည်တွင်းက စိုက်ပျိုးမွေးမြူရေးခြံတွေကနေ တိုက်ရိုက်ဝယ်ယူတာကို ဆိုလိုပါတယ်။ ခြံတွေကနေ တိုက်ရိုက်ဝယ်ယူခြင်းအားဖြင့် စားသောက်ဆိုင်တွေအနေနဲ့ လယ်ယာထွက်ကုန်တွေရဲ့ အရည်အသွေးနဲ့ လတ်ဆတ်မှုကို စိတ်ချရပြီး လယ်ပိုင်ရှင်တွေအနေနဲ့လည်း မိမိတို့ခြံထွက်ပစ္စည်းတွေအတွက် ယုံကြည်စိတ်ချရတဲ့ ဈေးကွက်တစ်ခု ရရှိလာကာ အကျိုးအမြတ်တွေ ပိုမိုရရှိလာနိုင်မှာ ဖြစ်ပါတယ်။ ဒါ့အပြင် ဟင်းသီးဟင်းရွက်၊ အသီးအနှံတွေကို စိုက်ခင်းကနေ လတ်လတ်ဆတ်ဆတ် ခူးယူပြီးတာနဲ့ တပြိုင်နက် စားဖိုမှူးတွေက ပြင်ဆင်ချက်ပြုတ်ကာ လယ်ထဲမှာတင် အစားအသောက် တည်ခင်းဧည့်ခံတဲ့ပုံစံအဖြစ်လည်း “Farm-to-Table” စနစ်ကို ကျင့်သုံးလေ့ရှိကြပါတယ်။ ဒါကြောင့် “Farm-to-Table” စနစ်က စားသောက်ဆိုင်တွေအတွက်ရော တောင်သူတွေအတွက်ပါ နှစ်ဦးနှစ်ဖက် အကျိုးရှိစေတယ်လို့ ဆိုနိုင်ပါတယ်။ "Farm-to-Table" ဖြစ်ပေါ်လာပုံ မြို့ပြလူနေမှုစနစ်တွေ တိုးတက်ချဲ့ထွင်လာတာနဲ့အမျှ အသား၊ ငါး၊ ဟင်းသီးဟင်းရွက်တွေဆိုတာလည်း နေရာအနှံ့ကို ယာဉ်ရထားတွေနဲ့ သယ်ယူပို့ဆောင်မှုတွေ ပြုလုပ်လာရပါတော့တယ်။ 1950 ကာလတစ်လျှောက်မှာတော့ တာရှည်ခံအောင် ရေခဲရိုက်ထားတဲ့ အသား၊ ငါးတွေနဲ့ စည်သွပ်ဘူးလို ပြုပြင်ဖန်တီးထားတဲ့ အစားအသောက်တွေ တစ်ဟုန်ထိုး ခေတ်စားလာခဲ့ပြီး ထိုအရာက “Farm-to-Table” လှုပ်ရှားမှု စတင်ပေါ်ပေါက်လာစေတဲ့ သမိုင်းအရင်းအမြစ် ဖြစ်လာပါတော့တယ်။ 1971 ခုနှစ်က အမေရိကန်နိုင်ငံ၊ California ပြည်နယ်၊ Berkeley မြို့မှာ ဖွင့်လစ်ခဲ့တဲ့ Chez Panisse စားသောက်ဆိုင်ဟာဆိုရင် “Farm-to-Table” စနစ်ကို စတင်ကျင့်သုံးခဲ့တဲ့ ပထမဆုံး စားသောက်ဆိုင် ဖြစ်ပါတယ်။ ထိုအချိန်ကစပြီး “Farm-to-Table” movement က အလွန်ရေပန်းစားတဲ့ အကြောင်းအရာတစ်ရပ်ဖြစ်လာပြီး “Farm-to-Table” စနစ်ကျင့်သုံးတဲ့ စားသောက်ဆိုင်တွေဟာလည်း ကမ္ဘာအနှံ့ ပေါ်ပေါက်လာပါတော့တယ်။ "Farm-to-Table" ၏ ကဏ္ဍလေးခု 🌾 Food Security - တစ်ဦးတစ်ယောက်ချင်းစီရဲ့ အစားအသောက်ဖူလုံရေးအတွက်သာမက community တစ်ခုလုံး အထူးသဖြင့် ဝင်ငွေနည်းပါးတဲ့မိသားစုတွေရဲ့ စားနပ်ရိက္ခာဖူလုံရေးအတွက်ပါ အထောက်အပံ့ပေးနိုင်ခြင်း 🌾 Food Proximity - food system တစ်ခုလုံးတွင် ပါဝင်နေသူများ “လယ်သမားများ၊ ဖြန့်ချိသူများ၊ စားသောက်ဆိုင်များနှင့် စားသုံးသူများ” ကြားက ဆက်နွှယ်မှုကို ပိုမိုနီးစပ်ခိုင်မာလာစေခြင်း 🌾 Self-reliance - ကိုယ်စားသုံးနေတဲ့ အစားအစာတွေ ဘယ်ကရသလဲ၊ ဘယ်လိုစိုက်သလဲဆိုတာကစလို့ food system တစ်ခုလုံးရဲ့ အရေးပါမှုတွေကို သိမြင်လာနိုင်ခြင်း 🌾 Sustainability - စိုက်ပျိုးချိန်မှစ၍ စားသုံးသူလက်ထဲ ရောက်သွားသည့်တိုင်အောင် အလေအလွင့်နည်းပါးပြီး သဘာဝအရင်းအမြစ်ကိုလည်း ထိခိုက်မှုမရှိစေခြင်း "Farm-to-Table" က ဘယ်လိုအကျိုးသက်ရောက်မှုတွေ ရှိသလဲ?
