Transglutaminase (TG), or meat glue as it’s commonly called, is used in many processed foods. It’s a controversial food additive and in 2010 the European Union banned its use. The United States Department of Agriculture (USDA) still allows it, and the FDA classifies it as “generally recognized as safe - as we know the US uses and allows any old shite in their food, and we are going the same way in the UK. Some meat glue is made from cultivated bacteria from blood plasma from pigs and cows, whilst other glues are made from cultivated bacteria from vegetables and plant extracts. Most are mixed with gelatin and caseinate. Transglutaminase is used so that small pieces of meat can be bound together to create larger, more uniform pieces. Hence, rubbish cuts of meat can be made to look like more expensive ones, and sold as such. The problem is that the outside of a piece of meat comes in contact with a lot of bacteria making its way from slaughterhouse to table. Usually cooking a steak on the outside will kill all that off. The center of a single cut of steak is sterile, that's why you can eat it rare. But glued pieces of meat could contain bacteria like E. coli on the inside. Food manufacturers are not required to disclose the use of meat glue even though it has been shown to increase gut permeability, which can cause leaky gut related issues, like fatigue, digestive issues, cognition problems, nutrient deficiencies, and more. Meat glue can also create symptoms in those with Celiac disease, as mTG acts as a binder, can increase the potency of gluten, and cause cross-reactivity. Meat glue also binds to proteins which create antigenic peptides: these can trick your body into thinking the proteins are an allergen, which sends the body into an autoimmune response. Meat glue can drive inflammation, autoimmunity, food allergies, leaky gut–not to mention the higher risk of food poisoning.  If you eat meat you deffo need to go organic and know who you're buying from .....
