— More sweeteners, maltodextrin, and other dry ingredients that alter the freezing point;

— More thickeners and stabilizers;
— More air than in regular ice cream (sometimes exceeding 100% by volume).
Now, by law, this chemical concoction can’t even be called ice cream, so it’s labeled as a “frozen dairy dessert.”
