Getting six quarts of chipotle beef in PC before 9:30AM 💪🏻. I was loading up the canner while my kids staggered out this morning. We can enjoy coffee/tea a breakfast, start some homeschooling—all while the PC does its thing. Every day I’m just tackling one small food prep project and whatever gets done gets done until baby decides to make their appearance. Canning does not have to be an all day ordeal. Small batch canning is what works best for me as a soon-to-be Mom of 4 who homeschools. Even if I get bulk produce or the garden is producing, I will tackle one small project a day until it’s all preserved. Often times I will prep everything the night before (do all my pealing/chopping) place it in the fridge and all I have to do the next morning is fill my jars. This will be nice to make burrito bowls with rice, tacos with the sourdough tortillas I put in the freezer last week, can open a jar of home canned dried beans and bone broth to make a soup, etc. for easy dinners in those postpartum weeks.

Purslane (Portulaca oleracea) is a common type of “weed” you tend to see out here and you can find it just about anywhere in the desert/ foothills. It is high in Omega 3’s and antioxidants, and you can toss it into things like salads, stir fries, soups and stews, and more! It can also be used in a similar fashion to how one would use aloe- as a poultice for minor burns, scrapes, or insect bites. I foraged some and turned it into a delicious peppery little pesto 😋 🍃 not disappointed! Threw it over some toast and butter, going to try over pasta later, maybe even throw it in an omelette tomorrow morning, who knows!
