The United Nations’ 2023 State of Global Climate report was record-breaking—and not in a good way. 2023 was the hottest year on record—capping off the hottest decade the earth has ever seen. These findings align with the warnings of its previous report. The United Nations’ 2021 report on climate change issued a “code red” for all of humanity: the climate crisis is playing out in realtime, and, if we don’t act soon, frequent natural disasters and rising ocean levels will put millions of people in immediate danger. We only have a few years to cut our greenhouse gas emissions, which will require a cascading series of paradigm shifts within our global economic system—as well as in our individual behaviors. Fortunately, the 2021 report wasn’t all doom and gloom: it provided concrete, actionable steps on how we can achieve the emissions reduction needed to address the crisis at hand. The UN identifies plant-based diets “as a major opportunity for mitigating and adapting to climate change,” and it recommends that governments around the world adopt policies to reduce meat consumption in their countries and regions. While new government policies have the potential to create a huge shift in our food system, the good news is that we, as individuals, already have the power to combat climate change through our food choices. Read on to find out how going vegan can reduce your individual impact on the environment—and how these positive impacts can add up to a more sustainable food system for all.Each one of us has a “carbon footprint”—a net total of greenhouse gas emissions generated by our own actions. In the US, our consumption habits generate an average 16 tons of carbon emissions per year. This represents one of the highest average carbon footprints of any country. To put this in perspective, if everyone in the world consumed resources like we do in the US, we would need the equivalent of five planet Earths to sustain everyone’s lifestyles. What we eat is one of the biggest contributors to our individual carbon footprint, and going vegan can ease our diet’s burden on the planet. In fact, a study from Oxford University identified going vegan as the “single biggest way” we can reduce our carbon footprint, shrinking it up to 73%. To help with the submission stress ~ a little sweet treat: The Best Vegan Chocolate Cake 🎂 🍰 Chocolate Cake • ▢ 1 cup unsweetened almond milk • ▢ 1 tablespoon apple cider vinegar • ▢ 2 cups all purpose flour • ▢ 1 3/4 cups granulated sugar • ▢ 3/4 cup cocoa powder • ▢ 2 teaspoons baking powder • ▢ 1 1/2 teaspoons baking soda • ▢ 1 teaspoon salt • ▢ 1/2 cup canola oil OR melted coconut oil • ▢ 2/3 cup unsweetened applesauce • ▢ 1 tablespoon pure vanilla extract • ▢ 1 cup boiling water Chocolate Buttercream Frosting • ▢ 1 cup cocoa powder • ▢ 1 1/2 cups vegan butter, softened baking sticks preferred • ▢ 4-5 cups powdered sugar • ▢ 2 teaspoons pure vanilla extract • ▢ 1/4-1/2 cup unsweetened almond milk Instructions  For the Chocolate Cake • Preheat oven to 350 degrees F and grease two 9-inch cake pans. I also line them with parchment rounds and lightly flour for easy removal of the cakes later. • Measure 1 cup unsweetened almond milk and add the tablespoon of vinegar to it. Stir slightly and set aside to curdle. • In a large bowl, add the flour, sugar, cocoa powder, baking powder, baking soda and salt. Whisk well to combine. • Now add the oil, applesauce, vanilla and almond milk/vinegar mixture. Mix on medium speed with a hand mixer (or stand mixer with the paddle attachment) until well combined.  • Lower the speed and carefully pour in the boiling water, continuing to mix into the cake batter until combined. The batter will seem very runny at this point; that is how it should be, trust me! • Divide the batter evenly between your cake pans. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean. After 10 minutes of cooling in the pan, carefully remove the cakes from the pans and let cool completely before frosting. For the Chocolate Buttercream Frosting • Add the cocoa powder to a large bowl (I just wipe out the cake bowl and use it for the frosting). Whisk well to remove any clumps. • Add the softened vegan butter and mix with a hand mixer until creamed and well combined. • Add half of the powdered sugar and half of the almond milk, and mix until combined. Add the rest of the powdered sugar and vanilla extract. Mix starting on low, and turn to high. Mix until fluffy and combined. • If the frosting seems too dry, add more milk, a tablespoon or two at a time. If the frosting seems too wet and doesn't hold it's shape, add more powdered sugar until it thickens up.  • Frost the cake using an icing spatula or just a butter knife. More than 800m trees have been cut down in the Amazon rainforest in just six years to feed the world’s appetite for Brazilian beef, according to a new investigation, despite dire warnings about the forest’s importance in fighting the climate crisis. Deforestation across Brazil soared between 2019 and 2022 under the then president, Jair Bolsonaro, with cattle ranching being the number one cause. The new administration of Luiz Inácio Lula da Silva has promised to curb the destruction. More than 2,000 hectares of forest were apparently destroyed on a single ranch between 2018 and 2021 – São Pedro do Guaporé farm, in Pontes e Lacerda, Mato Grosso state Alex Wijeratna, a senior director at the Mighty Earth advocacy organisation, said: “The Amazon is very close to a tipping point. So these types of figures are very alarming because the Amazon can’t afford to be losing this number of trees … this has planetary implications.” The MEP Delara Burkhardt said the findings reinforced the need for greater legislation globally to tackle deforestation: “The destruction of the Amazon is not only a Brazilian affair. It is also an affair of other parts of the world, like the EU, the UK, or China that import Amazon deforestation. That is why the consumer countries should enact supply chain laws to make sure that the meat they import is produced without inducing deforestation. I hope that the new EU law against imported deforestation will be a blueprint for other major importers like China to follow.” All of this shows the imperativeness of us cutting out as much meat from our diets as our consumer impacts have very far reaching impacts in countries far away ! Overnight Chocolate Chia Seed Pudding 24 g cacao powder or unsweetened cocoa powder 45-75 ml maple syrup 1/2 tsp ground cinnamon (optional) 1 pinch sea salt 1/2 tsp vanilla extract 360 ml Almond Breeze Almondmilk Original Unsweetened (or light coconut milk for creamier texture!) 96 g chia seeds Instructions: To a small mixing bowl add cacao powder (sift first to reduce clumps), maple syrup, ground cinnamon, salt, and vanilla and whisk to combine. Then add a little dairy-free milk at a time and whisk until a paste forms. Then add remaining dairy-free milk and whisk until smooth. Add chia seeds and whisk once more to combine. Then cover and refrigerate overnight, or at least 3-5 hours (until it’s achieved a pudding-like consistency). It may also be helpful to give the mixture an extra whisk/stir once it has been in the refrigerator for 30-45 minutes. Leftovers keep covered in the fridge for 4-5 days, though best when fresh. Serve chilled with desired toppings, such as fruit, granola, or coconut whipped cream. According to the Sierra Club, the average cheeseburger requires 698.5 gallons to produce. That includes 22 gallons to make the bun, 4.5 gallons to grow the lettuce and tomato, 56 gallons to produce one slice of cheese and a whopping 616 gallons, from start to finish, to make the meat patty. ~ Hence try to cut as much meat and animal products out of our diets so as to aid in water conservation as agriculture uses a large amount of water !

For our meatless monday lets look through a quick protein rich snack to get rid of those monday blues : smashed edamame toast ! • Incredibly simple. With just a few ingredients and a food processor, you can prepare this dish in less than 10 minutes. How easy is that? • Crazy flavorful. Simple though it may be, this recipe is anything but boring. Creamy, rich and nutty with bold garlicky and slightly spicy flavors, I find it hard to believe anyone wouldn’t like this edamame spread. Lime juice and zest add a zingy, citrus-y brightness that will keep you coming back for more. • Breakfast for the week. This recipe makes a generous four servings. Make a batch on Monday morning and you’ll have breakfast for almost the entire week. The shelf life is great, too, so you could even eat it the following weekend. • Customize to your liking. Delicious on its own, this recipe is also easy to customize with some creative toppings. Sauerkraut is a great source of probiotics for gut health, while pickled onions provide a delightful tang. You can add hemp seeds or thinly sliced tofu for even more protein. And if you have any microgeens or thinly sliced salad greens hanging around your fridge, they’d be terrific on top, too. • ▢ ¼ cup (56g) tahini • ▢ 12 ounces (340g) shelled frozen edamame, defrosted (Note 1) • ▢ ½ of a medium ripe avocado • ▢ 1 ½ tablespoons soy sauce or tamari (Note 2) • ▢ 4 garlic cloves roughly chopped • ▢ ½ to 1 serrano pepper roughly chopped (Note 3) • ▢ 1 big handful of cilantro leaves and tender stems remove thick stems • ▢ 1 teaspoon toasted sesame oil more to taste • ▢ 1 large lime zested and juiced • ▢ salt to taste For Serving • ▢ 6 tablespoons hemp seeds • ▢ Sauerkraut or pickled onions (optional) • ▢ 8 slices seeded or sprouted multigrain bread (toasted, if desired) INSTRUCTIONS • Add the tahini, edamame, avocado, soy sauce, garlic, chile pepper, cilantro, sesame oil, and lime zest and juice to a food processor. Start blending until it turns into a chunky dip. Season with salt to taste as needed. • Toast your bread of choice. Smear a generous amount of the edamame smash onto each slice of bread. • Top with hemp seeds and sauerkraut or pickled onions, if desired. • Store leftover spread in an airtight container in the fridge for 7 to 10 days. The green color will fade but it will still taste good. One serving of the edamame mash itself contains approximately 18-20 grams of protein. To reach 30 grams of protein per serving, serve over two slices of seeded or sprouted multi-grain toast and top with 1 1/2 TBSP hemp seeds.  Nutrition values are estimates only. Variations may occur due to brand and product availability and food preparation.  Note 1: You can also find refrigerated edamame at some grocery stores, like Trader Joe’s. Note 2: Use tamari to keep this recipe gluten-free. Note 3: Remove membranes for mild heat. 🌱 Hi guys! NUS VEGE is working with NUS Giving in their 'Plant-it-Forward' event on the 12th of October, where alumni donors, important faculty members and even the NUS President will be present. 🎓 🧀 VEGE will be conducting a Plant-Based Cheese Making workshop for nearly 100 people, so we will need 10 lovely members to help with the event for 3 hours. 💰 Everyone involved will be paid $12/h, and will need to be at Shaw Foundation Alumni House on the 12th of October from 9:30am to 12:30pm. fun vege fact : News sources are saying that 2024 will be the most vegan year to date. People in the UK consumed less animal flesh last year than at any point since records began in the 1970s. Around 1.5% of the UK population is now vegan, 3% of Germany's population, 2-5% in the US, and 9-10% of people living in India. Lets look forward to more years of environmentally sustainable diets!

We’re hoping to gather a larger group of people who are interested in being more actively being involved in VEGE’s activities, such as our advocacy, community-building and policy shifting efforts. We are planning on hosting a session soon where we bring together those interested in being more actively involved to brainstorm potential roles and initiatives people would like to work on, and what you would personally like to see from VEGE. We hope to be people-first and organise roles and activities around your interests and unique capabilities, so this is your chance to get involved in animal rights and animal product-related environmental initiatives you are personally interested in!
