On a different note, i was finally able to go and gather some fresh spruce tips from the local forest and make this gin with those and it makes all the difference
much more rounded, none of those sharp, rough, resiny flavors from the shitty old spruce tips that i found online, a much nicer citrus adjacent flavor, you know the kind if youve ever had spruce tip 'honey'
i made sure to gather enough spruce tips to last me for a long time
