Taro and Chestnut Medley (芋頭栗子燒)
📍Ingredients:
200g taro
60g precooked chestnuts
20g ginger
100g broccoli
50g red bell pepper
5g star anise
2 tbsp sesame oil
2 tbsp vegetarian oyster sauce
1 tbsp mirin
Black pepper, to taste
📍Directions:
1. Fry the cubed taro in hot oil at 160 degrees Celsius until cooked, then set aside.
2. Slice the ginger and cut the broccoli into small florets. Cut the red bell pepper into diamond-shaped slices.
3. In a pan, heat the sesame oil and stir fry the ginger until fragrant.
4. Add the star anise and chestnuts, and stir fry until fragrant.
5. Add the fried taro, vegetarian oyster sauce, mirin, and black pepper. Stir to combine.
6. Add 1/2 cup water and bring to a boil. Cover and simmer for one minute.
7. Add the broccoli and red bell pepper. Cover again and cook.
8. Once large water drops form on the inside of the lid, uncover the pot, and stir-fry everything briefly before serving.
