• Ingredients: Boneless chicken breast, ginger, garlic, soy sauce, paprika, salt, vegetable oil, Scotch bonnet, tomatoes, onions, parsley.
• Preparation:
1. Cut chicken into 1-inch cubes; marinate with blended ginger, garlic, soy sauce, paprika, and salt for 30 mins.
2. Thread 3–4 cubes onto small skewers; grill or pan-fry until golden and cooked through.
3. Make dip: Blend Scotch bonnet, tomatoes, onions; simmer, add salt and parsley. Serve dip in small shot glasses beside kebabs.
• Serving: Arrange on a platter garnished with lettuce leaves and lemon wedges.
