Well its been two weeks, the liquor has had some time to settle after distillation and i had another taste, comparing it to the regular rum i made earlier this year
The molasses flavors are a lot less overbearing, though still very present, but whats really nice is that the honey really adds a lot to the flavor, theres a very distinct honey flavor in there that, together with the molasses flavor, approximates the caramel flavor from pastries very well
Conclusion: just a single kilo of the cheapest honey added to a 25L rum wash already has a profound impact on the flavor
