Made with organic Conférence Belgian pears, roasted for hours in the oven and pushed right to the edge of caramelisation, just enough to deepen the flavour without losing the fruit. The jelly is made from their own cooking juice, with a touch of lemon and vanilla. You taste the pear first. Always. Underneath, a soft chocolate clafoutis with caramelised pear cubes, a sandy chocolate crumble, and that indulgent shell that cracks like an ice cream glaze. Comforting. Generous. Balanced. One of our first desserts and still, for many of you and for us, a favourite."
