A refreshing summer drink. Kefir (or any other dairy; buttermilk, yoghurt, etc.) mixed 1:1 with sparkling mineral water and chopped fresh mint. Best served well chilled. 49 calories, 3.5 grams of protein. per 200 ml.

It's summer, it's the ice cream season. If you have my cookbook, you should know the single ingredient banana ice cream that is silky smooth without any additives thanks to high pectin content in bananas. Another fruit you can work with this way is mango. Here's a blend of 250 grams of frozen mango, 200 grams of fermented coconut cream and hojicha tea powder to slightly balance the taste (both bananas and mangoes are some of the sweetest fruits so you can easily mix them with otherwise bitter or spicy ingredients such as coffee, cocoa or tea and still get a sweet ice cream). 227 calories and 5 grams of protein for almost a pound of ice cream. To increase the protein content, you can swap the coconut cream for yoghurt or another dairy product.
