SPINACH & FETA TURKEY BURGERS:
1 lb. ground turkey (I recommend 85-90% lean; if you go any higher, your burgers will likely be dry)
3 cloves garlic, minced
4 oz. feta cheese
2 cups chopped spinach
2 tablespoons fresh parsley, chopped
salt & pepper, to taste

1) combine all ingredients in a bowl and mix gently with hands, until thoroughly combined. Shape turkey mixture into four patties; set aside
2) In a large pan or skillet, heat 1 tablespoon avocado oil on medium high heat for ~1 minute; add burgers and cook on each side for 7-8 minutes, or until no longer pink in the center.

CREAMY CAULIFLOWER MASH:
1 head cauliflower, chopped
3 garlic cloves
3-4 tablespoons unsweetened milk
1/4 cup parmesan cheese
1-2 tablespoons ghee

1) in a large pot with a steamer basket, steam garlic and cauliflower until tender; add to a food processor along with remaining ingredients; blend until smooth.
