Running Tails on a USB stick (as shown in the video) allows the user to shut it down in an emergency such as this. Nothing is saved to the hard drive by default. There are methods of extracting your data, such as using compressed air to freeze the RAM so they can analyze it, but these are largely theoretical attacks. Turn it off when not in use.
