Banana Chocolate Cake Ingredients • 4 medium overly ripe bananas, mashed (about 1 1/4 cup mashed) • 1/2 cup melted coconut oil • 1/4 cup honey • 2 eggs • 2 teaspoons vanilla extract • 1 1/2 cups all-purpose flour • 1 1/2 teaspoons baking soda • 1 teaspoon ground cinnamon (optional) • 1/2 teaspoon kosher salt • 1/2 cup shredded sweetened or unsweetened coconut flakes Chocolate Fudge Frosting • 2 ounces cream cheese, at room temperature • 1 stick (8 tablespoons) salted butter, at room temperature • 1 cup powdered sugar • 1/2 cup unsweetened cocoa powder • 2 teaspoons vanilla extract • 1/4 cup canned coconut milk Instructions • 1. Preheat oven to 350 degrees F. Grease an 8-inch square baking pan. Line with parchment paper. 2. In a large mixing bowl, stir together the mashed bananas, coconut oil, honey, eggs, and vanilla until combined. Add the flour, baking soda, cinnamon, and salt, mix until just combined. Fold in the coconut flakes. Pour the batter into the prepared bread pan. Bake for 30-40 minutes, or until center is just set. Remove and let cool for at least 30 minutes before frosting. 3. To make the frosting, add the cream cheese and butter to a large mixing bowl. Using an electric mixer beat until light and fluffy, about 2 minutes. Add the powdered sugar, cocoa powder, and vanilla. Beat another 2-4 minutes or until the frosting is light and fluffy. Beat in the coconut cream until combined.  3. Spread the frosting over cake. Slice, snack, and enjoy! @FoodAndRecipesWithCherokee 🦉

Toe Jam 2 c tangerine orange juice 1 c elderberry juice 3 c sugar Put all ingredients into jam & jelly maker. Press jelly button increase time to 30 minutes. Allow jelly maker then go through its cool off period after the jelly cycle. When the machine is done with its cool off period set it again on the jelly cycle increasing time to 30 minutes. When done, the temperature of the jelly should be 220°F then ladle into jars leaving 1/4 inch headspace & process in hot water bath canner for 5 minutes. Rest for 10 minutes in hot water bath canner before removing. Hassleback Sweet Potatoes Ingredients • 2 tbsp. olive oil, plus more for baking sheet • 2 tbsp. pure maple syrup • 1 tbsp. fresh thyme leaves • 4 small sweet potatoes (about 2 1/2 pounds total), halved lengthwise • Kosher salt and freshly ground black pepper Directions Step 1 Preheat oven to 425°F with an oven rack in the top third. Lightly oil a rimmed baking sheet. Combine oil, maple syrup, and thyme in a bowl. Step 2 Working with one potato half at a time, place a wooden spoon or chopstick on each side of potato, and cut slits 1/4 to 1/8 inch apart crosswise down rounded side of potato, using wood sticks as a guide to avoid cutting all the way through. Repeat with remaining potatoes.  Step 3 Transfer to prepared baking sheet. Brush potatoes with maple mixture. Season with salt and pepper. Quiche Lorraine Ingredients • 1 pie dough 1/2 pound bacon 1 cup milk 1/2 cup heavy cream 3 large eggs 1/2 tsp kosher salt 1/2 tsp freshly ground black pepper 1/8 tsp ground nutmeg 1 cup grated gruyere or Swiss 1 heaping tbsp chopped chives Method Prepare dough: roll out pie dough into a 12-inch round. Place it in a 10-inch wide, 1 1/2-inch high tart pan, pressing dough into corners. Use a rolling pin to roll over surface of tart pan to cleanly cut off the excess dough from edges. Freeze for 30 minutes before blind-baking. preheat oven to 350°F. Line the crust with heavy duty aluminum foil. Fill tart pan with pie weights such as dry beans, sugar, or rice. Bake for 40 minutes. Cook Bacon & Chop into 1/4-inch to 1/2-inch pieces. Whisk eggs in a large bowl. Add nutmeg, salt, black pepper & chives & whisk a little more. Add milk & cream & whisk vigorously to incorporate. Arrange bacon & cheese in the bottom of the crust. Whisk the egg-milk mixture hard again for a few seconds, then pour it gently into the pie crust. Put the quiche into the preheated oven & bake for 30-40 minutes. Check for doneness after 30 minutes by gently jiggling the quiche. Cool on a wire rack.
