Authentic German Cinnamon Stars - Zimtsterne #cookies Ingredients:  2 cups finely ground almonds 2 ½ cups powdered sugar 4 tsp. cinnamon 1 pinch of salt 2 egg whites 2 tbsp. almond liqueur OR 1 tbsp. pure almond extract Glaze 1 egg white 1 cup powdered sugar Instructions: Blend almonds, powdered sugar, salt, and cinnamon. Add egg whites and almond liqueur or almond extract. Knead all ingredients to a smooth dough. Preheat the oven to 160°С and line two baking sheets with parchment paper or a silicone mat. Sprinkle your working surface with powdered sugar. To roll out the dough, work with a quarter of the dough at a time. Roll dough out to 0.5 cm thickness. With a floured cookie cutter, cut out stars and place them on the baking sheets. For the glaze, beat egg white with powdered sugar. Brush stars with the glaze and bake for 10 to 15 min. Persian Meat Patties- Kotlet # beef Ingredients: 500 gr ground beef 2 potato 1 onion 1 egg 3 Tbsp. flour ½ tsp turmeric ½ tsp black pepper 1 tsp salt 4 Tbsp vegetable oil To serve: 1 tomato sliced 1 cup pickles sliced fries Instructions: Grate the onion. Squeeze it very hard and dispose all the juice. (The juice will make the patties fall apart). Peel and grate the potato as well. Mix the grated onion with ground beef. Add the egg, flour and spices, using your hand, mix everything until well combined. The mixture is going to be very sticky. Heat the oil in a shallow pan over medium heat. Place a bowl of water near yourself, wet your hands, take about 2 tablespoons of the patty mixture, form into oval and fry it in the oil, about 5 minutes on each side until brown and cooked inside. Greek Chicken and Potatoes #chicken #dinner Chicken and Potatoes  1,3 kg chicken pieces, bone in and skin on Salt about 900 gr potato, scrubbed clean, cut into wedges 1 medium yellow onion, halved then sliced 1 tsp black pepper 1 lemon, sliced 1 cup chicken broth 6 to 12 pitted kalamata olives fresh parsley Lemon-Garlic Sauce 60 ml extra virgin olive oil 60 ml lemon juice 12 fresh garlic cloves, minced 1 ½ tbsp dried rosemary (or oregano) ½ tsp ground nutmeg Instructions: Preheat oven to 180 degrees C. Pat chicken dry and season with salt. Arrange potato wedges and onions in the bottom of a baking dish or pan. Season with salt and black pepper. Add the chicken pieces Whisk together olive oil with lemon juice, minced garlic, rosemary, and nutmeg. Pour evenly over the chicken and potatoes. Arrange lemon slices on top. Oven Baked Mashed Potato Cakes #snack #appetizer #potato Ingredients: 800 gr potatoes, peeled and rinsed 2 eggs 2 tablespoons onion, finely chopped salt and black pepper 1 cup panchetta (or ham, bacon…), diced 2 tablespoons butter 1 tablespoon milk 2 tablespoons chives, chopped 4 tablespoons breadcrumbs Directions: Cook potatoes in salted water. Meanwhile gently fry onion until translucent and set aside. In a large bowl, combine potatoes, eggs, pancetta, onions, butter and chives. Season with salt and pepper to taste. Adjust the texture with a bit of milk if necessary. Preheat your oven to 190°C and line a baking sheet with parchment paper. On the baking sheet, using a ring mold, sprinkle a layer of breadcrumbs, then scoop potato mixture to shape the cakes. Finish with another thin layer of breadcrumbs. Easy Seafood Paella #seafood #rice #dinner Ingredients: 4 small lobster tails 3 tbsp olive oil 1 large yellow onion, chopped 2 cups rice 4 garlic cloves, chopped 2 large pinches of saffron threads soaked in ½ cup water 1 tsp sweet paprika 1 tsp cayenne pepper ½ tsp chile pepper flakes salt 2 large tomatoes, chopped 200 gr green beans, trimmed 300 gr large shrimp, peeled and deveined ¼ cup chopped fresh parsley for garnish Instructions: Boil the lobster tails very briefly (2 minutes) in 3 cups of water. Remove the shell and cut the lobster into large chunks. In a large skillet heat 3 tablespoon olive oil. Add onions and saute for 2 minutes, add the rice and cook for 3 more minutes, stirring regularly Add garlic and the lobster cooking water. Add the saffron, paprika, cayenne pepper, and salt. Stir in the chopped tomatoes and green beans. Cook on low heat for 20 minutes Spread the shrimp over the rice and cook for another 10 minutes. Homemade dinner rolls #bread Ingredients: 1 cup whole milk warm 2 ¼ tsp active dry yeast 3 tbsp sugar 4 tbsp butter melted 1 large egg room temperature 1 ½ tsp salt 3 cups all-purpose flour 2 tbsp butter melted, to brush Instructions: Mix warm milk, active dry yeast and sugar and let sit for 3-5 minutes until it starts to bubble. Add melted butter, 1 egg, salt, and half of the flour. Using a dough attachment, mix it up. Then gradually add the rest of the flour, mixing. Knead for about 5 minutes. Add 2 tbsp olive oil and grease the dough fro all sides. Cover with plastic wrap or a towel and let it rise for about 2 hours or until the dough doubles in size. Grease a baking pan. Cut the dough in 12 equal pieces and roll them into a ball shape. Place them in a baking pan, leaving some space in between. Cover with a clean towel and let rise for 1 more hour. Garlic Roasted Cabbage #vegetarian_recipe #side_dish Ingredients:  1 medium cabbage 4 tbsp. butter or oilve oil 1 tsp. salt or to taste 2 tsp. taco seasoning or your favourite spices 1 ½ tbsp. garlic powder Instructions:  Remove the bruised outer leaves from the cabbage. With a sharp knife, gently cut it into 2 sm rounds. Spread the softened butter/oilve oil on top of the cabbage rounds and season with salt, spices, and garlic powder. Line a large baking sheet with parchment paper. Arrange the cabbage rounds on the paper, seasoned side down. Now spread the butter on the top of the rounds again and sprinkle the seasonings on as well. Bake for about 20 minutes at 220 degrees C. Remove the cabbage rounds from the oven, flip them over carefully, and bake them again for another 15-20 minutes. When done, they should be nicely roasted and cooked through. Author: Tania Sheff

Chicken Skewers in the Oven #chicken #dinner Ingredients:  1 kg chicken thighs boneless and skinless, cut into pieces 2 tblsp olive oil 1/2 cup plain whole milk yogurt 2 tsp paprika 2 tsp cumin 2 tsp salt 1/2 tsp onion powder 1 tsp ginger 1/2 tsp black pepper 1/2 tsp turmeric 2 to 3 tsp minced garlic to taste 2 tblsp parsley finely chopped 2 tblsp cilantro finely chopped Instructions:  In a large bowl, add the chicken, the olive oil, yogurt, paprika, cumin, salt, onion powder, ginger, black pepper, turmeric, minced garlic, parsley, and cilantro. Mix all together to marinade evenly. Cover and let it sit in the fridge for at least an hour or overnight. If you don't want the wooden skewers to burn in the oven, soak them in water for about 20 minutes. Preheat oven to 220°C. Thread the pieces of chicken onto the skewers. Mediterranean-Style Fish Soup #soup #fish Ingredients: 1 ½ tsp coriander 1 tsp cumin ½ tsp red pepper flakes ¾ tsp turmeric ½ tsp paprika 700 gr fish fillet, cut into chunks salt and black pepper olive oil 1 red onion, chopped 1 red bell pepper, chopped 2 celery ribs, chopped 4 garlic cloves minced 1 can tomatoes (800 gr) ½ cup white wine 4 cups vegetable or chicken broth 1 cup chopped fresh parsley 1 cup chopped fresh cilantro 3 green onions chopped 1 lemon (juice) Instructions: Mix the spices together. Season the fish with salt and black pepper and 2 teaspoons of the spice mixture; toss to coat. In a large pot heat 3 tablespoons olive oil. Add onions, bell peppers, celery, and garlic. Cook for 5 minutes. Add salt, black pepper and the rest of spice mixture. Add tomatoes, white wine and broth. Bring to boil and let simmer for 20 minutes. Baked Lemon Garlic Salmon #dinner #fish 900 gr salmon fillet salt olive oil ½ lemon, sliced into rounds parsley for garnish for lemon-garlic sauce: zest of 1 large lemon juice of 2 lemons 3 tbsp olive oil 5 garlic cloves, chopped 2 tsp dry oregano 1 tsp sweet paprika ½ tsp black pepper Instructions: Heat oven to 190 degrees C. In a small bowl mix together the lemon juice, lemon zest, olive oil, garlic, oregano, paprika and black pepper. Give the sauce a good whisk. Prepare a sheet pan lined with a large piece of foil (should be large enough to fold over salmon). Brush top of the foil with extra virgin olive oil. Pat salmon dry and season well on both sides with salt. Place it on the foiled sheetpan. Top with lemon garlic sauce (make sure to spread the sauce evenly.) Fold foil over the salmon. Bake for 20 minutes until salmon is cooked. Carefully remove from oven and open foil to uncover the top of the salmon. Place under the broiler briefly, about 3 minutes or so. Author: Suzy Karadsheh
