Considerations When Choosing a Chicken 1. Climate Compatibility: The Only Essential —cold hardy or heat tolerant. Buy a breed that will thrive in your climate — especially if you live in a place of extreme weather. 2. Purpose: Egg, Meat, Dual Purpose — every chicken can be eaten and every hen will lay eggs. However, some are bred specifically for one or the other. For instance, Leghorns are excellent egg chickens — laying lots of eggs with less feed needs than other breeds — but they never really get big enough to make them an ideal meat bird. Freedom Rangers are faster growing for earlier butchering —but also lay eggs . (without being totally weird like the Cornish Cross that has been engineered for meat to the point that you have to butcher them at a young age.) Heritage Breeds are dual purpose.
