Process 🍳🔪 (1) In a small pot/ddukbaegi, add sesame oil, onion, scallion and garlic. Stir well until soft. (2) Add in gochugaru powder, soy sauces and sugar. Stir well until it becomes somewhat like a paste. (3) Add in the beef rolls and stir fry until cooked. Add in kimchi and continue stirring. Add in water, fish sauce and chicken seasoning powder and let it boil for 5 minutes. (4) Lastly, add enoki mushroom, silken tofu, egg and scallion as garnish. Process 🥘🔪 1) Preheat oven at 160c. In a bowl, Whisk the egg yolks and sugar until just combined together. Set aside. 2) In another bowl, add heavy cream and milk and salt together in a medium saucepan over medium-low heat. As soon as it begins to simmer, remove from heat. Stir in the vanilla extract. 3) Whisk the mixture in slowly into the egg yolks. Keep stirring so they don’t scramble. Strain the mixture for a smooth custard. 4) Place ramekins in a large baking pan. Divide custard between each ramekin. Use a blowtorch to remove any air bubbles. 5) Carefully fill the pan with hot water until 2/3 way up of the ramekins. Bake for about 25-30 minutes until the edges are set and centers are a little jiggly. 6) Refrigerate for 2 hours. Dab the top of the custard to remove any condensation/ use cling wrap. Add a teaspoon worth of sugar on top and caramelize the top of each custard. Wait for 3 mins to allow it to harden and serve! Alternative (1): Heat a metal spoon for about 2 mins and move around a small section until caramelized. Process 🔪🥘 [pancake syrup] 1. In a medium saucepan, combine brown sugar and water. Bring it to a boil while whisking to ensure the sugar is dissolved. (The sugar will rise up), then lower the heat and heat it for another 4 minutes. Add butter and keep stirring till fully melted. Remove from heat and let it cool for 10 mins. [pancakes] 1. In a mixing bowl, combine self-raising flour, baking powder, salt, and sugar. Mix well to ensure the dry ingredients are evenly distributed. 2. Make a well in the center of the dry ingredients and pour in the beaten egg and about half of the milk. 3. Gradually whisk the wet and dry ingredients together, starting from the center and working your way outwards. This will help prevent lumps from forming. 4. Add the remaining milk, melted butter and whisk until you have a smooth batter. 5. Heat a non-stick frying pan over medium heat. Once the pan is hot, ladle a portion of the batter onto the pan. Use the back of the ladle to spread the batter into a circular shape. 6. Cook the pancake for about 1 - 1 1/2 minutes, or until you see alot of bubbles forming on the surface. 7. Carefully flip the pancake using a spatula and cook for an additional 1-2 minutes, or until the other side is golden brown. 8. Repeat the process with the remaining batter.
