| 4 | Researchers found that several common food additives—including maltodextrin, gum arabic, guar gum, locust bean gum, DATEM, sorbitan monostearate, glyceryl stearate, and glyceryl oleate—reduced the amount of Akkermansia, a beneficial gut bacterium. Although the decrease was not statistically significant, it showed a clear trend.
Studies in people have also shown that individuals with inflammatory bowel disease (IBD), especially ulcerative colitis, tend to have lower levels of Akkermansia than healthy people.
Higher levels of Akkermansia are linked to better gut health, improved metabolism, and lower inflammation, suggesting this beneficial bacterium may help protect against chronic inflammatory diseases.

Soy lecithin and mono- & diglycerides did not cause major changes to the gut microbiome.

Researchers believe this may be because sunflower lecithin contains more omega-6 fatty acids, which can promote inflammation.
The researchers also compared mono- & diglycerides, glyceryl oleate, and glyceryl stearate. While the first two had little or no effect on the gut microbiome, glyceryl stearate caused significant harmful changes.
Key takeaway: Even food additives that have a similar chemical structure can have very different effects on your gut bacteria. Some appear relatively harmless, while others may disrupt the gut microbiome and increase inflammation.
