Enjoyed my preferred selection of the highest quality raw meats as well as a bunch of cooked ones. From the top to the right: different raw beeves with steak tartar, specially marbled steak tartar, wasabi karubi (boneless short rib, this one is to be cooked) and my absolute favorite dish in the world, raw liver sashimi with onions, chives and horseradish drizzed in sesame oil, of which I had two full dishes. Don’t knock the last one till you’ve tried it. I despise cooked liver but prepared raw, beef liver is out of this world and also one of the healthiest, the most nutrient rich foods available.
