Ampleforth
I have allocated a small part of my portfolio to $AMPL here. I'm not writing a book on how this works exactly, but it's an elastic supply protocol that's been around for quite a while.
Currently making 2-3% daily on rebase rewards by holding the token. There's several vault and staking structures available as well in case you're looking to lock up some tokens.
