Burnt Basque Cheesecake in a Loaf Pan
Ingredients
16 oz (2 blocks) cream cheese, softened
3/4 cup granulated sugar
3 eggs
1 cup heavy cream
1 teaspoon vanilla extract
1/4 teaspoon salt
1 tablespoon all-purpose flour
Instructions
Preheat oven to 425°F (220°C).
Line a loaf pan with parchment paper, leaving extra paper hanging over the sides.
In a large bowl, beat cream cheese and sugar until completely smooth.
Add eggs one at a time, mixing well after each addition.
Stir in heavy cream, vanilla, salt, and flour until silky smooth.
Pour batter into the prepared loaf pan.
Bake for 35–45 minutes until the top is deeply golden brown and slightly burnt while the center still has a gentle jiggle.
Cool at room temperature for about 1 hour.
Refrigerate for at least 4 hours or overnight for the best creamy texture.
Slice and serve chilled or slightly softened at room temperature.

Proof that Cecil the Chaos Monster DOES chill out sometimes! 🥹 He has a condition called lissencephaly, which means “smooth brain.” I included his MRI to show what his smooth brain actually looks like.
A normal brain has lots of little folds and grooves across the surface. Those folds aren’t just decorative — they create more surface area for brain tissue. With lissencephaly, the brain doesn’t develop all of those normal folds, so the surface is much smoother. You can actually see that difference on Cecil’s MRI.
His MRI also showed enlarged fluid-filled spaces inside his brain, called ventricles, but the big diagnosis explaining why Cecil is so uniquely Cecil is lissencephaly.
And Cecil is VERY Cecil. 😂 His brain processes the world a little differently, and his emotions tend to come with the volume turned all the way up. He can be ridiculously affectionate, completely unhinged, wildly energetic, bitey, hilarious, and then apparently… this. Passed out on the stairs like he has never caused a problem in his life.
Cecil is still available for adoption in Woodbury, NJ. He needs someone who understands that his behavior isn’t something to punish or scold him for. He needs a person who will appreciate the strange, funny, loving little creature that he is.
He isn’t currently on medication and may live his whole life without needing any, although kittens with his brain abnormality can develop seizures later. If that ever happens, his neurologic care is covered for life through our Wyatt’s Army Lifetime Program.
