10-MINUTE MEAL IDEA 🍅 INGREDIENTS: ▪ 4-5 medium tomatoes (about 1 lb) ▪ 2 eggs ▪ 2 tbsp extra virgin olive oil ▪ 1/2 medium onion (about 1/3 cup chopped) ▪ 1 small piece red bell pepper (about 1/4 cup chopped) ▪ 1/3 cup grated cheese (about 1.5 oz) ▪ Spices to taste (pepper, paprika, oregano, salt) ⏳ Time: 10 min | 🌡 Heat: medium-low on stove STEPS: 1️⃣ Heat the olive oil in a pan over medium-low heat. Add chopped onion and bell pepper and cook for 3-4 minutes until soft. 2️⃣ Add whole tomatoes and cook for 2 minutes, then peel and mash them well in the pan. 3️⃣ Mix spices and grated cheese into the tomato mixture. 4️⃣ Add the eggs and gently stir until cooked to your liking (2-3 minutes).
